biodynamic Wheatgrass

Dear BD Practioners,

I grow wheatgrass for a small health food store. So I want to make it the best it can be. I'm using organic wheat and rye berries 50/50 for the winter. 40lb bags.

I am using compost for trays in a thicker layer than usual to give roots more room. I am trying to plant on leaf days.  The grain is presprouted for 2 days.  I saw  something about a yarrow seed soak that I have not done yet. 

The trays are on racks on side of house with only some noon time sun.

Is that going to be problem with the witching hour of noon? It will be difficult to find other location but not impossible. I water with water that has been standing for over a day. 

Location: North of Pasadena, Calfornia NW of Los Angeles USA

I've considered doing 4 grains: wheat, rye, barley and oats.

Where can you get oats that are not heat treated and will sprout?

Any suggestion to help me do better?
