What you will need

Necessary Ingredients: 2 or 3 Napa cabbages; 1 bunch of scallions; 4-5 large carrots of any color; 1 daikon radish; 5-10 cloves of garlic; fresh ginger; fish sauce (or soy sauce); gochugaru (Korean red pepper flakes); non-iodized salt (sea salt or Himalayan salt)

Optional Ingredients: 1 pear or Korean pear; sesame seeds; shrimp paste; rice flour

Materials: 2 large mixing bowls; cutting board and knife; cheese grater (optional); 2 half-gallon wide-mouth mason jar (or any large glass jar or crock you can fit your hand into - it does not have to be airtight)
